How nameservers work
Every domain is delegated to a set of nameservers. The registry of the top-level domain, such as Verisign for .com, stores which servers answer for each domain. Resolvers start at the root, follow that delegation and then ask the domain's own nameservers for its A, MX and TXT records.
Whoever runs those nameservers controls the domain's DNS. Moving to a new DNS provider means copying the records to the new provider first, then changing the nameservers at the registrar. Lower the TTLs a day before, so the switch reaches resolvers sooner.
